I wanted something a little different in the dressing so I improvised and we liked the results. I always use the packaged coleslaw mix because I am lazy! This calls for Miracle Whip, but mayonnaise can be used as well. I don't care for very creamy coleslaw so if you do just make a little more dressing. The time does not include the refrigeration time for the dressing. If you are counting points, as on WW, this is 3 points using light Miracle Whip and Splenda.
Ingredients:
1 cup miracle whip
2 tablespoons sugar (i use splenda)
1 teaspoon dijon mustard
2 tablespoons white wine vinegar
1 tablespoon dried onion flakes
1/2 teaspoon celery seed
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
16 ounces coleslaw mix
3/4 cup raisins
Directions:
1. Mix the dressing ingredients together well in a bowl, using a whisk.
2. Pour into a jar with a lid and refrigerate for several hours to blend the flavors.
3. In a large bowl add the coleslaw mix, dressing and raisins and mix gentley until the coleslaw mix is coated evenly with the dressing. Let stand in the refrigerator for about 30 minutes and then serve.
