Caribbean Stuffed Sweet Potatoes

an easy side dish kind of like twice potatoes use your imagination of what you want to stuff it with use veggies or different meats etc ........ courtesy of caribe cooking
Ingredients:
1 medium onion
-vegetable oil
4 rashers of bacon
1/2-cup whole kernel corn
2- tablespoons of butter
1/2 -1-cup of any cooked diced meat or hamburger fried and drained
2 pounds sweet potatoes (2 large)
-salt and pepper to taste
herbs that go well with sweet potatoes
are thyme, parsley, mint and chives. cinnamon
Directions:
1. Scrub potatoes well. Dry & brush with
2. oil,
3. Transfer the potatoes on a baking
4. sheet and cook at 400 degrees F. for 1
5. hour or until done.
6. Next Fry the bacon along with the onion
7. until the bacon is crispy and the onion
8. is transparent.
9. Remove potatoes from the oven, cut each
10. into half and scoop out the flesh. Chop
11. roughly.
12. Next add the butter and corn, with the
13. seasoning along with the bacon mixture.
14. Mix well.
15. Spoon the mixture back in the potato
16. shells. Reheat into the oven for about
17. 10 to 15 minutes.
