Caribbean Rice and Beans

These are delicious. Very close to the ones you can get at the Caribbean Restaurant.
Ingredients:
coconut oil or olive oil
1 large onion, chopped
16 ounces rice (uncooked)
1 (16 ounce) can red beans (or kidney beans)
16 ounces coconut milk
16 ounces chicken stock
1 tablespoon fresh thyme
3/4 teaspoon allspice
2 bay leaves
3 scallions, chopped
2 -3 garlic, minced
1 scotch bonnet pepper, whole
1 -2 teaspoon brown sugar
salt, pepper
Directions:
1. Add oil to a pan and add onions. When onions are soft, add rice. Stir. Cook for 1-2 minutes.
2. Then add rest of ingredients. Bring to a boil and simmer until rice is done. Keep checking and add water or more chicken stock if necessary.
3. Once done, pull out the bay leaves before serving.
