Caribbean Jerk Chicken Packets

I came up with this today because it is so warm out I didn't want to heat up the kitchen...Please note...prep and cooking time do not reflect marinating time.
Ingredients:
4 chicken breasts, boneless, skinless
8 ounces caribbean jerk marinade (i use kc masterpiece)
4 medium red potatoes, washed, thinly sliced with the skin on
1 large onion, sliced into rings
garlic, minced to taste
1 (15 ounce) can diced tomatoes with jalapenos
1 cup caribbean jerk marinade, divided
red pepper flakes, to taste (optional)
splash pickapeppa sauce (optional)
Directions:
1. Place chicken breast in large zip lock baggie and add jerk marinade. Allow to sit for at least 1 hour - overnight even better! Taking 2 sheets of foil per person - spray foil - add chicken, and divide remaining ingredients between each of the four packets. Add 1/4 cup of marinade to each packet and splash of pickapeppa if using Cook on the grill on low heat for 30 minutes - or until juices are clear.
