Caribbean Cucumber Salad

Served this with pineapple pork and black beans and rice and fried plantains and it was a big hit.
Ingredients:
4 cucumbers, peeled
2 teaspoons coarse salt
2 jalapeno peppers (or pepper of choice), seeded and minced
4 teaspoons lime juice
2 garlic cloves minced (or more depending on taste)
2 green onions, chopped
Directions:
1. Slice cucumbers lengthwise and remove seeds with spoon. Slice each half into 1/2 pieces (or thinner if you prefer). Place in bowl and sprinkle with salt. Toss gently and let them sit for 30 minutes, then rinse and drain.
2. Place cucumbers in serving bowl and add peppers, lime juice, garlic, and onions. Toss well. Cover and let sit at room temperature for one hour, then move to fridge and let it sit for another to chill.
3. Toss again and serve.
