Carbonara Meets Mac N Cheese

This was an experiment that turned out great!
Ingredients:
250 g pasta (shells or macaroni)
4 slices bacon (diced)
1/2 onion
2 garlic cloves
1/2 teaspoon chili flakes
1/4 teaspoon mustard powder
1 cup milk
1 teaspoon arrowroot
1 cup cheese (grated)
Directions:
1. Cook pasta according to packet directions.
2. Saute diced bacon over Medium to Low heat till fat begins to render.
3. Add diced onion and crushed garlic to bacon and continue to cook Med-Low heat until onion begins to turn golden - at least 15mins.
4. Add Chilli Flakes, Mustard, and Milk. Bring to a low simmer.
5. Mix Arrowroot powder with a couple of tbsp of cold water and mix to a slurry.
6. Take sauce off the heat, add Arrowroot and stir till evenly thickened.
7. Add cheese and stir till melted.
8. Add cooked pasta and stir till coated.
