My kids call this Rainbow Salad . Slightly changed from Lora Brady's cookbook The Kitchen Survival Guide . If you are a fan of strong flavors, and love caraway, you will love this. It's my favorite coleslaw. Ingredients:
32 oz shredded 3-color deli-style coleslaw mix or broccoli slaw mix with carrots and red cabbage |
1 large sweet onion, chopped |
1 yellow bell pepper, chopped |
1 red bell pepper, chopped |
2 t. salt |
1/2 c red wine vinegar |
1/3 c low-sodium soy sauce |
2 t sugar |
2 t caraway seeds (or to taste) |
1 1/2 c hellmann's mayo |
Directions:
1. Mix the salt, vinegar, soy sauce, sugar, caraway, and Hellmann's together. 2. Place all the ingredients in a large salad bowl and toss well. 3. Season with salt and pepper. Serve chilled. |
