Caramelized Pear Tart

This is kind of an upside-down tart in that the crust is placed on TOP of the fruit in the skillet. It's always been a little tricky for me to turn our but Ed's usually around for these emergencies! Read more ! Be sure to tuck crust around pears really well.
Ingredients:
5 bosc pears, firm
1/2 stick unsalted butter
1/2 cup sugar
1/2 teaspoon cinnamon
pie crust, store-bought or homemade
Directions:
1. Preheat oven to 425 degrees F.
2. Peel, core and halve the pears.
3. Melt butter in 8 or 9 cast iron skillet.
4. Arrange pears on top of butter in skillet, cut-side up, wide end at rim.
5. Sprinkle pears with cinnamon.
6. Cook without stirring over medium heat until sugar caramelizes.
7. Cool completely in skillet.
8. Roll pie crust into an 11 round.
9. Arrange crust over pears making sure to tuck edges around fruit well.
10. Bake in the middle of the oven for 30 to 35 minutes.
11. Remove from oven.
12. IMMEDIATELY turn onto serving plate.
13. Garnish with leftover pears.
14. Serve with whipped cream dollops and/or ice cream.
