Caramelized Onion Goat Cheese Tart

A versatile tart for a brunch, as an appetizer, or as a side dish. Originated from a recipe in a Junior League cookbook, but evolved through several hands, into a more substantial dish. Even my teenagers like it. Read more . Enjoy!
Ingredients:
1 unbaked deep dish pie shell ( prepared or your own pastry)
1 medium vidalia onion, sliced into rings
2 t extra virgin olive oil
2 t butter
1 small vidalia onion, coarsley chopped
10-11 oz. goat cheese, broken into several pieces
1 cup heavy cream
3 eggs
salt & freshly ground pepper or to taste
Directions:
1. Transfer pie crust to deep pie plate.
2. Melt butter and olive oil in medium pan, add onion rings and saute until tender, lightly browned and beginning to caramelize. Spread onto pie crust.
3. Place remaining ingredients in blender and blend on high until incorporated.
4. Pour mixture over onions.
5. Bake in a 350 degree oven until puffed and golden. Shield edges with foil if they brown too quickly.
6. Serve warm or at room temperature.
7. There may be a small amount of filling left over. Pour into a small greased souffle dish and bake along with tart for a chef's treat.
