This is the caramel sauce my family use to fill small pastry cases. The final step of beating the caramel well is very important - the caramel should become light brown in colour
Ingredients:
3/4 cup brown sugar
1 tablespoon plain flour
vanilla essence
2 ounces butter
1/2 cup milk
1 egg yolk
Directions:
1. In a saucepan, mix together the flour and sugar until well blended.
2. Chop the butter into small pieces.
3. Add a little of the milk to the flour and sugar and mix well until smooth and then add the rest of the ingredients.
4. Stir over a medium heat and when mixture starts to thicken, remove from heat and beat well with electric mixer.
5. Mixture will thicken more when cool.
