This recipe came from my neighbor many years ago. It's made in the microwave and a paper bag so the mess is just thrown away. It has a nice buttery taste and once you start eating it, you can't stop.
Ingredients:
2 packages microwave popcorn, popped
1 cup brown sugar, packed
1/2 cup margarine
1/2 cup white corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
Directions:
1. Pop popcorn in microwave.
2. Place popped popcorn into a large brown paper bag.
3. **Make sure you separate all unpopped kernels from popcorn before putting in bag.
4. You don't want to bite down on unpopped kernels** Set aside the bag.
5. In a deep glass bowl, combine brown sugar, margarine, corn syrup and salt.
6. Microwave this mixture on high until it starts to bubble.
7. Stir and continue to cook on high for 2 minutes.
8. Add baking soda to brown sugar mixture and stir until it becomes frothy.
9. Carefully pour syrup mixture over the popped popcorn in bag and shake to coat.
10. (Mix is very hot).
11. Fold down bag and microwave on high for 1-1/2 minutes.
12. Remove bag, shake to coat.
13. Fold down bag and microwave again on high for 1-1/2 minutes.
14. Remove bag, shake to coat.
15. Fold down bag and microwave one last time for 30 seconds.
16. Shake to distribute caramel and break apart.
17. I put this into an airtight container, but continue to break apart until cooled.
