This one is fun to do with the kids over the long summer...an easy dessert, and something they can do almost on their own (except for that hot oven!). Have fun and use your imagination to make the pie wedges your own creative masterpiece! Read more !
Ingredients:
1 refrigerated ready-made pie crust
caramel ice cream topping (mrs. richardson’s butterscotch caramel is excellent and very thick!)
milk chocolate chips
a few optional ingredient ideas
sweetened, flaked coconut
butterscotch chips
white chocolate chips
peanut butter chips
mini kisses
mini m&ms
diced pecans or walnuts, salted peanuts or cashews or pistachios or macadamias - whatever nut you like
toffee bits
sprinkles
Directions:
1. Fold out pie crust and lay it on a large baking sheet; patting it down just a bit but keeping the round pie crust shape.
2. Bake at 425 degrees for 10 minutes or until lightly browned.
3. Remove from oven; cool 15 minutes.
4. Spread a very thin layer of a thick caramel ice cream sauce over the crust.
5. Top caramel sauce with a layer of chocolate chips (or any other optional topping ideas you want to add that need to melt a bit); place pan back into a hot oven to let chips melt for a few minutes (remember, the chips won’t actually spread out when they melt, so check to see when they are soft enough to spread) – remove pan from oven and gently spread/swirl chips over caramel layer.
6. Cool and cut into pie-shaped wedges.
7. NOTE: for a fun sundae idea, use the baked wedges as a base for a scoop of ice cream - your toppings will be on the bottom of the dish on the wedge and not quit so runny and messy for the kids!
8. FRUIT WEDGES VARIATION: Skip the syrup and chips, instead spreading the cooled crust with a thin layer of cream cheese sweeetened with some powdered sugar, then topping it with whatever diced fruit you would like - you just need a thin base of something for the fruit to adhere to when you sprinkle it over the crust (much like a fruit pizza without much work for the base). Again, use whatever toppings you like with the fruit - a sprinkle of powdered sugar, a drizzle of melted white or milk chocolate, a bit of glaze (especially nice with strawberries, or just au natural !
