Caramel Pecan Fudge Pie

Ingredients:
crust
1 1/2-2 cups ground oreo cookies (regular or chocolate filled)
5 tablespoons melted unsalted butter
1/4 teaspoon vanilla extract
combine all ingredients and press into a glass pie plate (i use a deep dish)
filling
1 1/2 sticks (3/4 cup) unsalted butter
3/4 cup dark brown sugar (if you have only light brown sugar in your pantry it’s ok to use)
6 tablespoons corn syrup (light or dark)
3 tablespoons heavy cream
3 cups pecan halves
2 ounces unsweetened chocolate melted or chopped fine (i use the microwave for melting)
Directions:
1. Preheat oven to 350 degrees
2. In a heavy saucepan combine, butter, sugar and corn syrup over low heat stirring frequently until melted. Raise the heat and boil, stirring constantly for 4 minutes
3. Stir in heavy cream and pecans and return to a slow boil for 5 minutes
4. Remove from heat and stir in the chocolate
5. Pour into the pie pan and bake approximately 10 minutes or until the mixture bubbles
6. Cool then refrigerate
7. If you wish you may run a knife around the edges and remove the pie from the pan to slice. I do this to free-up my pie pans for my next project
8. Serves 12-16
9. Freezes well tightly covered for 2-4 months
