Caramel Pecan Bars

Ingredients:

  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 cups pecan halves
  • 3/4 cup butter
  • 1/2 cup liquid honey
  • 3/4 cup brown sugar

Directions:

  1. Preheat oven to 350ºF (180ºC).
  2. In medium bowl, cream butter and sugar.
  3. Beat in egg.
  4. Stir in flour.
  5. Press evenly in 10x15-inch (25x 40cm) jelly roll pan.
  6. Bake for 10 minutes.
  7. Remove from oven.
  8. Spread pecans evenly over crust, placing them broken sided down.
  9. With a bit of planning in each bar when it is cut.
  10. In a large heavy saucepan over medium heat, melt butter.
  11. Stir in honey and brown sugar.
  12. Cook, stirring constantly, until sugar dissolves and mixture boils.
  13. Continue boiling and stirring for 5 minutes or until mixture is a rich caramel colour.
  14. Remove from heat.
  15. Throughfuly blend in cream.
  16. Pour over pecans.
  17. Bake fifteen minutes.
  18. This can be turned into something akin to a pecan pie by doubling the nuts by 3 cups (750 mL).
