Caramel Frosted Hang Around Cake

If you are a fan of the Hummingbird Cake then you will absolutely LOVE this! Everybody will hang around to get this recipe!
Ingredients:
3 eggs, lightly beaten
3 cups all purpose flour
2 cups sugar
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon cinnamon
2 cups mashed ripe bananas(5 medium)
1 cup cooking oil
1 1/2 teaspoons vanilla
2 cups peeled, shredded uncooked sweet potatoes(about 1/2 lb)
1 8oz. can crushed pineapple(juice pack) drained

1 cup butter
2 cups packed brown sugar
1/2 cup milk
6 cups powdered sugar
Directions:
1. Let eggs stand at room temperature 30 minutes.
2. Preheat oven to 350 degrees F.
3. Grease & flour 3 9-inch round cake pans
4. Line bottoms with waxed paper or parchment paper.
5. Grease & flour paper; set aside
6. In bowl combine flour, sugar, baking powder, salt & cinnamon
7. Stir in bananas, oil,eggs and vanilla until moist & thick
8. Stir in sweet potatoes & pineapple
9. Spread evenly in prepared pans
10. Bake 30 minutes or until pick inserted near centers comes out clean.
11. Cool in pans on wire racks 10 minutes.
12. Remove from pans.
13. Peel off the paper and cool completely.
14. **FROSTING RECIPE**
15. In large saucepan melt 1 cup butter
16. Add 2 cups brown sugar
17. Bring to boil over medium heat, stirring constantly
18. Cook and stir 1 minute; cool for 5 minutes
19. Whisk in 1/2 cup milk until smooth
20. Whisk in 6 cups powdered sugar until smooth & creamt
21. USE AT ONCE, FROSTING STIFFENS AS IT COOLS
22. Makes 4 cups frosting
