Caramel Coffee Fondue

This is another recipe from the new Shortcuts - Almost From Scratch Weight Watchers Cookbook. It's a microwave recipe so takes only moments to make and serve warm.
Ingredients:
2 tbsp. fat-free half-and-half
1/2 tsp. instant coffee granules
3 tbsp.s white chocolate chips
3 tbsp. fat-free caramel topping
3 cups assorted cut-up fresh fruit (such as apple, pineapple and strawberries)
Directions:
1. To make the fondue, place the half and half in a small microwavable bowl. Sprinkle with the coffee and let stand until the granules dissolve about 1 minute. Add the chocolate chips and microwave on High 20 to 30 seconds, just until the mixture begins to simmer. Stir until smooth. Add the caramel topping and stir until blended.
2. Tranfer the fondue to a serving dish. Serve warm with the assorted fruit for dipping.
