These are sinfully rich, but I love the sweet and salty combination…and I’m a cashew junkie. It's quick to make, they freeze well, and just about everybody loves cashews!
Ingredients:
crust
2 cups flour
1 cup brown sugar
1/2 cup butter, cut into 8 pieces, and softened
11/2 cups salted cashews (if whole, smash just a bit)
topping
11 tablespoons butter
1/2 cup packed brown sugar
Directions:
1. With mixer, or by hand, mix together flour, 1 cup brown sugar and 1/2 cup softened butter until well blended.
2. Press mixture into bottom of 9x13 pan; sprinkle with cashews.
3. Heat the additional 11 tablespoons butter and 1/2 cup brown sugar in saucepan, cooking until sugar dissolves.
4. Bring mixture to a gentle boil and continue to simmer gently for 1 minute, stirring constantly (you don't want to boil it too hard or it will become too stiff when cooled).
5. Immediately pour over the crust and cashews.
6. Bake at 350 degrees for 20 to 25 minutes.
7. Cool completely before cutting into bars.
