I have searched all over the net looking for a Caramel Cake recipe like my grandma's and came up empty. My mom and I recently made this from memory and it turned out exactly like hers. i am now posting it on Zaar so we don't lose it again as my grandmother has Alzheimer's, it is forever locked in her head now. Hope you all enjoy this simple but yummy recipe as much as my family does.
Ingredients:
1 3/4 cups flour (can use cake flour if you prefer)
1 cup white sugar
1 pinch salt
2 teaspoons baking powder
1 cup unsalted butter
3/4 cup milk
1 -2 teaspoon vanilla (depends on your taste)
1 1/4 cups brown sugar, dissolved into 1 1/4 cups boiling water
1 teaspoon vanilla
Directions:
1. Preheat oven to 350°F.
2. in a small bowl combine Flour, Salt and baking powder.
3. In a large bowl cream together the butter and sugar until light and fluffy. Add the vanilla and milk, beat into butter and sugar mixture. Once well combined, add the dry ingredients and mix well with a wooden spoon - do not over mix.
4. Spread the batter evenly into a greased 8 x 8 square baking dish. Pour the caramel sauce over the top. (the sauce will float on the top of the batter).
5. Bake in 350 degree oven for 30-35 minutes (until toothpick comes out clean).
6. When serving, cut pieces and flip upside down so caramel sauce is on the top. This cake is great served warm with vanilla ice cream or just on it's own.
