Caramel Bread Pudding with Dried Fruit

Ingredients:
6 slices whole wheat bread, day old, cut in 1/2 inch cubes
1/4 cup candied ginger, diced
1/4 cup dried apples, diced
1 cup hot water
1 cup splenda brown sugar blend, packed
1/4 cup egg substitute
1/2 cup splenda
2 cups fat free evaporated milk, warmed
1/2 tsps vanilla extract
1/2 tsps ground cinnamon
1/8 tsps salt
Directions:
1. Preheat oven to 350.
2. Toss bread, ginger and apples together. Place bread/fruit mixture in greased 2 qt baking dish.
3. Combine hot water and brown sugar. Pour over bread.
4. Combine remaining ingredients. Pour over bread.
5. Bake 50 - 60 minutes til knife inserted in center comes out clean.
