Caramel Banana Cornbread Pudding

A new type of bread pudding. Yummy and easy!
Ingredients:
caramel banana cornbread pudding
1 (8 oz package corn muffin mix
3 sliced bananas
3/4 cup dark brown sugar, divided
3 cups 2% low fat milk
4 eggs
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 cup caramel sauce or topping
Directions:
1. Prepare corn muffins according to package instructions.
2. Cool Crumble 4 muffins into large chunks.
3. Preheat oven to 325F.
4. Lightly butter a 2 qt or 8 inch square ceramic baking dish.
5. Arrange banana slices in the dish.
6. Top with 1/4 cup brown sugar and chunks of corn muffins
7. Combine milk, eggs remaining brown sugar & cinnamon; whisk well.
8. Pour over muffins, Bake 50 minutes.
9. Drizzle with caramel sauce.
10. Serve warm.
11. Serves six
