Ingredients:

  • 1/3 cup brown sugar
  • 1/4 tsp cinnamon
  • 2 1/2 cups all-purpose flour
  • 2 tbsp folgers classic roast instant coffee powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup buttermilk
  • 3/4 cup pbrown sugar, packed
  • 1/3 cup vegetable oil
  • 1 egg

Directions:

  1. Preheat oven to 375°F Grease a 12-cup muffin pan or line with paper liners.
  2. TOPPING: Combine brown sugar, cocoa and cinnamon in a small bowl. Reserve.
  3. MUFFINS: Combine flour, instant coffee powder, baking powder, baking soda, cinnamon and salt in a large bowl.
  4. In a separate bowl, combine buttermilk, brown sugar, oil and egg. Stir in dry ingredients. Stir in chocolate chips. Spoon batter into prepared muffin pan.
  5. Sprinkle muffins with reserved topping.
  6. Bake in preheated oven for 20 minutes.
