This is an easy treat for anyone needing a chocolate or coffee fix! I love the coffee chocolate combination. So yummy! Enjoy! Ingredients:
2 cups self-rising flour |
1/2 cup solid vegetable shortening |
1 stick butter, unsalted, softened |
1/2 cup granulated sugar |
1/2 cup packed light-brown sugar |
1 large egg |
1 teaspoon vanilla extract |
2 tablespoons instant coffee |
1 package mini chocolate kisses for baking, ten ounce bag |
Directions:
1. Preheat oven to 375. 2. In large bowl, beat together butter, sugars, and shortening until creamy. Beat in egg and vanilla extract. Dissolve coffee in 4 teaspoons water. (If you have a good, strong coffee brewed, you can substitute 4 tsps. for the instant.) Stir into butter mixture until a soft dough forms. 3. With wet hands, roll dough into 1-inch balls. Place on nonstick baking sheets. Bake for approximately 10 minutes, then press three mini-kisses into top of each cookie. Cool on cookie rack. Enjoy! |
