Ingredients:
12 slices stale bread
10 ounces cubed cream cheese
3/4 cup pitted prunes plumped in hot water and diced
3/4 cup seedless white raisins diced
2 large bananas sliced
1 cup sliced almonds
2 cups water
1-1/2 cups packed brown sugar
1/2 teaspoon cinnamon
2 cups water
1 cup granulated sugar
4 eggs separated
4 tablespoons flour
reserved egg whites
2 tablespoons granulated sugar
sweetened whipped cream or ice cream
Directions:
1. Toast bread and cool.
2. Using a well- buttered rectangular baking dish make a layer of bread using about half the bread then top with half the cheese, half the prunes, half the raisins and all the bananas.
3. Add another bread layer then the remaining cheese, fruits and nuts.
4. Set aside.
5. In a medium saucepan boil the water, sugar, and cinnamon together for 5 minutes and pour over the pudding mixture.
6. In the same saucepan boil the water and sugar for 5 minutes.
7. Remove 1 cup and beat with egg yolks and flour then add this egg mixture to the remaining syrup and cook over medium heat stirring constantly for 5 minutes.
8. Pour custard over the bread and fruits.
9. Cover and let stand several hours at room temperature or refrigerate overnight.
10. When ready to bake the pudding beat egg whites until very stiff beating in the sugar at the last.
11. Spread atop the pudding and bake at 350 for 40 minutes.
12. Serve small portions with a dollop of ice cream or whipped cream.
