Cap City Diner's mashed potatoes
Ingredients:
2 quarts diced potatoes
1/2 lb butter
1/2 cup buttermilk
2 tablespoons fresh chives
salt and pepper
Directions:
1. Simmer potatoes until fork tender.
2. Heat buttermilk and butter.
3. Mash potatoes and slowly add buttermilk and butter.
4. Season with salt, pepper, and fresh chives.
