Canton Chicken and Rice

Ingredients:
cooking spray
3/4 lb chicken tenders
2 scallions, minced
1 garlic clove, minced
1 teaspoon fresh ginger, minced
1/4 cup soy sauce
3 tablespoons dry sherry
1 teaspoon cider vinegar
2 tablespoons honey
1/4 teaspoon cayenne pepper
1 tablespoon sugar
4 cups cooked rice
Directions:
1. Spray wok or skillet with cooking spray. Heat over medium until hot.
2. Add chicken, scallions, garlic, and ginger and stir-fry until chicken is nicely browned; 4-5 minutes.
3. Combine remaining ingredients (except rice) and stir into chicken, and cook 3-4 minutes.
4. Serve over rice.
