If you like chilled soups you'll find this delicious. It's unusual but very tasty. It can be served for breakfast, lunch or appetizer. The kids even like it. Very refreshing on a hot summer day.
Ingredients:
3 - 5 peaches, peeled and chopped
4 ounces crushed pineapple, in its own juice
4 ounces pineapple chunks, in its own juice
8 ounces orange juice
4 tbsp lemon juice
1/8 tsp nutmeg
1/8 tsp cinnamon
1 tsp vanilla
1 medium to large cantaloupes, cut in cubes
fresh basil, for garnish
Directions:
1. Place chopped peaches into a blender along with the pineapple, orange juice, lemon juice, nutmeg, cinnamon, and vanilla.
2. Pulse to blend coarsely.
3. Add cantaloupe, start with 1 cup until you have a decidedly cantaloupe flavor, rather than a pineapple taste.
4. Refrigerate overnight so all the flavors blend together.
5. Stir before serving.
