This is a recipe from my mother-in-law. She made it for her family while they were growing up. The first time I had it was before DH and I were married. I instantly fell in love with the flavors. I hope you enjoy it as well. We like this with homemade french bread or breadsticks and a salad. You can use your own crepe recipe or the one I am posting. The yield is approximate. Preparation time is also approximate.
Ingredients:
2 cups flour
2 cups milk
1/4 cup vegetable oil
1/4 teaspoon salt
3 eggs
8 ounces cream cheese, softened
2 eggs
2 cups cottage cheese
4 green onions, thinly sliced
1 cube butter or 1 margarine
28 ounces spaghetti sauce
1/2 cup parmesan cheese
Directions:
1. Beat crepe ingredients together very well. Cook crepes and set aside.
2. Beat filling ingredients together until fluffy.
3. Fill crepes. (I like to spread the filling out peanut butter style and roll up.).
4. Place crepes in greased 9x13 baking pan. Pour jar of spaghetti sauce over crepes.
5. Cover with Parmesan cheese.
6. Bake at 350 degrees for 30 minutes, uncovered.
