A perfect light summer meal.
Ingredients:
1/2 cup cider vinegar
1/3 cup olive oil
2 1/2 teaspoons sugar
3/4 teaspoon salt
1/4 teaspoon pepper
2 (15 ounce) cans cannellini beans, drained
1 (7 ounce) jar roasted red peppers
1 (6 1/2 ounce) can tuna in olive oil, undrained
1/4 cup capers
2 tablespoons chopped parsley
Directions:
1. Mix ingredients 1-5. Gently combine all ingredients. Serve.
2. You can also add red onion and/or cherry tomatoes.
