This is a salsa recipe I got from my sister to can salsa. It is great for canning or you can also eat it fresh.
Ingredients:
5-6 c chopped roma tomatoes
2 c chopped bell peppers
2-3 jalapenos or more if you like
2 c chopped onion
4 cloves garlic minced
3 hot banana peppers (can also use anaheims if you want)
3 sweet banana peppers(optional)
1/2 c apple cider vinegar
1/2 c lime or lemon juice
1 6oz can tomato paste
1 1/2 tsp salt
1 tsp dry red pepper
1 bunch fresh cilantro chopped
Directions:
1. mix ingredients together.
2. Put in pint jars
3. Process for 30 minutes in hot water bath
4. I use my food processor to chop everything. Can chop as coorse or as fine as you like.
5. Makes about 6-7 pints
