Candi's Apple Cake

Never tried this, but it's got four apples in it and she (Candi) said it won a prize, so it must be good.
Ingredients:
4 apples, peeled and diced
2 cups sugar
3 cups flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 teaspoons baking soda
1 cup vegetable oil
1 teaspoon vanilla
2 eggs, well beaten
Directions:
1. Mix apples and sugar. Let stand for 1 hour. Stir often so that mixture makes its own juice.
2. Add dry ingredients, then oil, then vanilla and eggs. Do not use a mixer.
3. Pour into a well greased and floured tube pan (or any pan); bake for 1 hour and 15 minutes at 350*. Frost with cream cheese frosting or thin glaze.
4. In hot, humid weather, keep this cake in the fridge to prevent mold.
