Candied Pineapple Chunks

Good for Christmas or to put into fruitcake!
Ingredients:
1 medium ripe pineapple
1 cup water
2 cups sugar
1/3 cup light corn syrup
Directions:
1. Peel pineapple and slice into bite sized chunks.
2. In a heavy saucepan bring sugar, water and corn syrup to a boil.
3. Add pineapple chunks.
4. Cook over low heat until fruit becomes transparent.
5. Drain pineapple on rack and allow to dry.
6. Store in airtight container.
