Canadian Salmon Salad

A nice salad for lunch or a light dinner. From Joyce's Fine Cooking.
Ingredients:
2 cups salmon, cooked
3 hard-boiled eggs, chopped
1/2 cup cheddar cheese, diced (may use other cheese)
3 medium tomatoes, diced
salt and pepper
1 1/2 cups macaroni, -cooked (shell, spiral, or elbow)
1/4 cup diced sweet gherkin
2 tablespoons sweet pickle juice
1/2 cup celery, chopped
3/4 cup mayonnaise
Directions:
1. Mix all ingredients together well and chill till ready to serve.
2. Nice served over lettuce leaves. Enjoy!
