I got this recipe from a friend on another cooking site, I made a few changes.
Ingredients:
1/2 lb pre-cooked shrimp (thawed)
2 cups cooked pinto beans (save about 1/4 cup water from beans)
1/2 onion minced
3 garlic cloves minced
1 tblspn butter
8 oz sour cream
salt to taste
sides
diced jalapeno
cilantro
mozzarella cheese
tortillas
Directions:
1. 1.Melt butter in heavy pot.
2. 2.Cook onions and garlic until they are caramelized.
3. 3.Add beans with water.
4. 4.Bring to boil, then reduce heat.
5. 5.Add sour cream and shrimp.
6. 7.Boil gently until shrimp turns pink, approximately 5 minutes.
7. 8.Top with shredded mozzarella cheese, diced jalapenos, cilantro and serve with tortillas.
