Calypso Prawns

If you like more sauce then double the recipe but not the prawns.
Ingredients:
1/2 small onion, finely chopped
1/2 tsp ginger grated
1 clove garlic, crushed
1 level teaspoon of curry powder
2 tsps vinegar
1/4 cup tomato sauce
2 tbsp sweet chilli sauce
1 chopped spring onion
1 small tub natural unsweetened yoghurt
500g prawns, uncooked (heads off, tail on)
Directions:
1. Place onion, ginger, garlic, curry powder and a little oil into a small pot and heat until onion starts to go soft.
2. Add tomato sauce, vinegar, sweet chilli and spring onion, heat on low heat for 5 minutes.
3. In a large pan place 2 tsp of butter or oil and garlic with the prawns and cook until they change colour.
4. Add the cooked sauce to the prawns and add the yoghurt.
5. Serve with rice and a green salad.
6. Yummy.
