Ingredients:
2 pounds fresh crab meat
3 tablespoons peanut oil
3 scallions, including the green tops, minced
2 cloves garlic, minced
2 branches fresh thyme, crumbled, or 1/2 teaspoon dried
1/2 pound slab bacon, cut into 1/4-inch dice or use equal portion of cubed ham
2 bunches of fresh spinach or use one bunch of spinach and one big bunch of sorrel, cleaned with stems removed -some sub swiss chard, i don't it is too strong
1 pound okra, topped, tailed, and cut into rounds
5 cups water
1 can of coconut milk unsweetened
salt and freshly ground black pepper
1 scotch bonnet-type chili, pricked with a fork
juice of 3 limes
*there are as many versions of callaloo as there are versions of meatloaf. there are some givens, lots of greens, okra, simmered in water with bacon, ham or pig tail. crab is added after cooking in a separate bunch of seasonings. scallions,garlic, thyme, scotch bonnet or habenero are essential items. i like the addition of lime and coconut to this version. we serve it over blanco rice.
Directions:
1. Brown the crab meat in the oil with the scallions, 1 teaspoon of the garlic, and the crumbled thyme.
2. In a stockpot, brown the diced bacon.
3. Wilt the spinach in the rendered bacon fat.
4. Add the okra, cover with the water, and add salt and freshly ground black pepper to taste.
5. Cook for 20 minutes, stirring constantly with a whisk.
6. When okra is tender and it is thickened, add the coconut milk.
7. Add the crab meat, remaining garlic, and chili that has been pricked with a fork.
8. Continue to cook over very low heat for 20 minutes, stirring occasionally.
9. When done, add the lime juice, whisk it through thoroughly, and serve hot.
