California roll sushi = crab, mayo and avocado, right? This recipe was an invention of mine because I was craving california rolls SO badly but didn't want to go to the trouble of making sushi rice, etc. This dip is so delicious! Read more ! I like serving it with crisped wonton chips or sesame rice crackers.
Ingredients:
3 avocados, large and ripe
1/2 - 1 tsp lime juice
1/2 - 1 tsp wasabi powder (adjust to taste)
1 cup crab meat, canned or fresh (as long as it tastes good!)
1/2 cup mayonnaise (adjust according to personal preference)
1/4 cup scallions or green onions or chives, finely chopped
1 - 2 tbsp nori furikake (optional)
Directions:
1. Peel and remove pit from avocados. Place the flesh in a bowl and smash with a fork. Mix the lime juice w/ the wasabi powder and create a paste. Add this paste to the avocado and mix well. Set aside.
2. In a seperate bowl, combine the crab meat with the mayonnaise and stir to combine. (make sure to pick through the crab meat prior to mixing in the mayo to make sure there are no shell bits that were accidently left behind - this can happen w/ pre shucked crab! Better to check than to end up breaking a tooth on a piece of shell) Set aside.
3. In a clear, shallow baking dish (such as a glass 8 x 8 cake pan) spread the avocado evenly on the bottom. Top with crab mixture. Sprinkle with the chopped scallions and furikake. (if using)
4. Serve cold w/ wonton chips or sesame crackers. :-)
5. ***note*** Furikake is a name for various seasonings used in Japanese cooking. It comes in shakers and is available at most asian grocery stores. The type I use in this is made w/ toasted nori and looks pretty as well as helps give this an authentic Japanese flair. :)
