This is a fantastic recipe and very different from the ordinary quesadilla. I got this friend from my friend Margarita. It's good as an appetizer or as a main course for lunch or dinner. Enjoy
Ingredients:
1-1/2 cups diced peeled papaya
1/4 cup chopped fresh cilantro
3 tablespoons diced red onion
3 tablespoons fresh lime juice
1 cup crumbled goat cheese
1/4 cup bottled roasted red bell pepper drained and chopped
1/4 cup cream cheese softened
1 teaspoon minced seeded jalapenos
6 flour tortillas
vegetable cooking spray
cilantro sprigs
Directions:
1. Preheat oven to 200. 2. Combine first four ingredients in a bowl then stir well. 3. Cover and chill. 4. Combine goat cheese, chopped peppers, cream cheese and jalapeno in a bowl and stir well. 5. Spread 2 tablespoons of the cheese mixture over each tortilla and fold in half. 6. Coat a large nonstick skillet with cooking spray and place over medium heat until hot. 7. Add 2 quesadillas and cook 1 minute on each side or until browned. 8. Remove quesadillas from skillet and place on a baking sheet and keep warm in oven. 9. Repeat procedure with remaining quesadillas then cut each quesadilla in half crosswise. 10. Arrange 2 quesadilla halves and 1/4 cup papaya mixture on each of 6 plates. 11. Garnish with cilantro sprigs and serve.
