Ready, Set, Cook! Hidden Valley Contest Entry. Healthy, fresh combination of California sushi roll and a chicken salad sandwich.
Ingredients:
4 sheets nori (seaweed wraps)
1 cup plain fat free greek yogurt
1 (1 ounce) package hidden valley original ranch dressing mix
1 tablespoon chopped chives
juice of half lemon
1 cooked chicken breast, shredded
1/2 cup shredded carrot
1/2 cucumber, peeled and sliced into ribbons with a vegetable peeler
1 avocado, sliced
1 cup fresh spinach, stems removed
Directions:
1. Combine yogurt, ranch dressing mix, chives, and lemon juice in medium bowl. Add chicken and mix well. Spread chicken mixture evenly among nori wraps. Top with spinach, carrots, cucumber ribbons, and avocado. Fold into a wrap and enjoy!
