Calico Bell Pepper Muffins

This recipe is from the Great American Favorite Brand Name Cookbook.
Ingredients:
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped yellow bell pepper
1/4 cup finely chopped green bell pepper
1/4 cup butter or 1/4 cup margarine
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
3/4 teaspoon salt
1/2 teaspoon dried basil leaves
1 cup milk
2 eggs
Directions:
1. Preheat oven to 400ºF.
2. Grease or paper-line 12 (2-1/2 ) muffin cups.
3. In small skillet, over medium high heat, cook peppers in butter until color is bright and peppers are tender crisp, about 3 minutes.
4. Set aside.
5. In large bowl, combine flour, sugar, baking powder, salt, & basil.
6. In small bowl, combine milk & eggs until blended.
7. Add milk mixture & peppers & any liquid in skillet to flour mixture.
8. Stir just until moistened.
9. Spoon into muffin cups.
10. Bake 15 minutes or until golden & wooden toothpick inserted in center comes out clean.
11. Remove from pan.
12. Serve warm.
