This pudding is only made here in Gibraltar, with chick pea flour.
Ingredients:
3 cups chickpea flour
6 cups cold water
1/4 pint oil
salt and pepper
Directions:
1. Mix the flour and salt with the water, cover and leave to stand for about 3 hours.
2. pour the oil into a baking tray, or tin,(deep tray or tin) allowing sufficient to cover the bottom of the tin, and heat in the oven.
3. beat the flour mixture and season.
4. when thoroughly hot pour in the flour mixture and bake in a quick oven (reg 8) for about half an hour, or until a golden crust forms on top.
