Ingredients:

  • 1 beef bone with marrow and, 1 porous with pieces of chambarete
  • (chamberete: spanish style beef crosscut, bone-in beef shanks called chambarete or oso buco in mexico)
  • 8 cups water
  • 1/4 onion
  • 1 sprig cilantro
  • 1/2 cup of peas

Directions:

  1. Cook the bones and meat in water with garlic and cilantro.
  2. Skim off foam with a spoon. (If making stock)
  3. Let boil until the meat is soft.
  4. Add potatoes and peas and let cook until they soften.
  5. Skim off foam with a spoon. Add salt and pepper.
