Fish Soup
Ingredients:
1 tbsp olive oil
1/2 onion, chopped
2 tbsp shallot, minced
1 tbsp orange zest
14 oz fish stock
2 oz white wine
3/4 lb tilapia, chunked
2 medium potatoes, quartered
1 cup spinach
1 tbsp orange juice
Directions:
1. Boil potatoes
2. Saute onion in oil for 5-7 min
3. Add shallot and zest for 3 min
4. Add stock and boil/simmer for 10 min
5. Add fish and simmer until opaque
6. Put potatoes in bowl, will slotted spoon, transfer fish to bowls. Add greens and lime juice to broth until wilted. Season and pour into bowls.
