Ingredients:
3 cups cooked rice, cool
2 cups cooked chicken, diced
1 cup canned pineapple, diced
1 cup celery, sliced
1 cup mayonnaise
1/4 cup peach preserves or 1/4 cup pear preserves
3/4 teaspoon curry powder
1 cup cheddar cheese, grated
Directions:
1. Combine all ingredients except cheese.
2. season to taste.
3. garnish with cheese.
