Ingredients:
4 zucchini or 4 yellow squash
1 apple, sliced
1 large onion, chopped
3 tablespoons oil
1/4 teaspoon garlic salt or 1 (4 ) can green chilies, chopped
2 cloves garlic, minced
1 cup cheddar cheese, grated
1 (16 ) can whole kernel corn
Directions:
1. Saute' squash and onion in oil until barely tender.
2. Add garlic salt (or fresh garlic), chilies, corn and cheese; mix well.
3. Put in buttered 1-quart casserole and bake at 400 for 20 minutes.
