CAJUN STYLE SWEET POTATO AND HAM TOSS SALAD DATED 1971 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Champion Estate in Arlington, Texas in 1987.
Ingredients:
1-1/2 pounds sweet potatoes peeled and cut into chunks
2 tablespoons olive oil
1/2 pound boiled ham cut into chunks
3 large scallions sliced
1 large garlic clove crushed
1/4 teaspoon freshly ground black pepper
1 tablespoon mustard
1 tablespoon cider vinegar
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
watercress sprigs
Directions:
1. Place potatoes and enough water to cover in saucepan over high heat and bring to a boil.
2. Reduce heat to low then cover and simmer 15 minutes then drain well.
3. Heat 1 tablespoon oil in skillet over medium heat.
4. When hot cook ham, scallions, garlic and black pepper until ham is lightly browned.
5. Stir occasionally then add sweet potato chunks and cook 5 minutes longer.
6. Combine mustard, vinegar, cayenne and salt then add potato mixture and toss to mix well.
