Ingredients:
1 small zucchini, sliced
1/2 medium yellow summer squash, sliced
1/2 medium red onion, chopped
1 tablespoon canola oil
1/2 pound uncooked medium shrimp, peeled and deveined
1 teaspoon cajun seasoning
1/2 teaspoon garlic powder
1/8 teaspoon pepper
dash crushed red pepper flakes
1 cup hot cooked brown rice
Directions:
1. In a large skillet or wok, stir-fry the zucchini, yellow squash and onion in oil for 2-3 minutes or until crisp-tender. Add shrimp and seasonings; stir-fry 3 minutes longer or until shrimp turn pink. Serve with rice. Yield: 2 servings.
