Cajun Frizzled Kale With Vegetarian Sausage

I made this recipe up one day when these were all the ingredients I had on hand. I use veggie sausage, but you an use real sausage if you want. It looks ugly, but tastes great. It goes well with homemade bread or cornbread.
Ingredients:
4 -5 leaves kale
1/2 cup fat free greek yogurt
1 vegetarian sausage patties
1 roma tomato
1 green onion
1/2 teaspoon cajun spices (to taste)
1 1/2 teaspoons canola oil
salt
1/2 teaspoon lemon juice
Directions:
1. Remove stems from kale and chop into thin strips.
2. Dice green onion.
3. Dice tomato.
4. Mix yogurt, salt and Cajun seasoning , if desired. Let sit 5 minutes or more.
5. Cook sausage according to package directions. When done, cut into 6 or so pieces.
6. Heat oil in a small frying pan on high temperature until hot. Throw kale in, tossing occasionally. Cook until it begins to darken. If the kale burns a little, that's OK.
7. Turn heat down. Add onion and tomatoes to kale. Cook until tomato pieces are warm.
8. Add yogurt mixture to pan and cook until warm. It may separate some or get runny. That's OK.
9. Add sausage to pan and stir well. Add lemon juice and stir.
10. Remove from heat and eat.
