  1. The Turkey should be clean and dry, inside and out. Inject turkey with butter seasoning. Cover the outside of the carcass with Tabasco sauce, and then sprinkle moderately with Lemon & Pepper seasoning and Tony Chachere’s Creole Seasoning. Pour peanut oil into pot and make sure there is enough oil to cover the turkey, but not overflow when the bird is immersed. Heat oil to 350 degrees Fahrenheit. When oil is hot enough place the turkey into the basket and slowly lower into hot oil. Be careful not to splash the oil. Fry about 3-1/2 minutes per pound of turkey
