Cajun Crawfish Cornbread

A great twist on cornbread you are sure to enjoy!
Ingredients:
1 pound crawfish tails
2 cups yellow cornmeal
1 can cream style corn
3 eggs, slightly beaten
1 1/2 cup sharp cheddar cheese, grated
2 jalapeno peppers, finely chopped
3/4 cup onion tops
1 onion, finely chopped
1/2 cup oil
1 cup milk
1 tsp salt
1/2 tsp cajun seasoning (i use tony chacheres creole seasoning
3tsp baking powder
1/2 tsp baking soda
Directions:
1. Saute onions in a little butter until onions are transparent. Add jalapeno peppers and set aside.
2. Mix together all ingredients, except crawfish.
3. Add in cooked onions and peppers, then crawfish.
4. Pour into a greased 13x9 pan and bake at 400 degrees for 35-40 minutes or until toothpick in the middle comes out clean.
