Cajun Corn Maque Choux

A classic South Louisiana dish with a slightly different twist. From Southern Living. Love it!!
Ingredients:
1 small onion, chopped
1/4 cup chopped green bell pepper
1 -2 tablespoon olive oil
3 cups frozen white shoepeg corn, thawed
2 plum tomatoes, diced
1/4-1/2 lb andouille sausage, cooked and diced
1/4 cup chopped green onions with top
salt and pepper
Directions:
1. Heat oil (over medium heat) in a large skillet.
2. Saute the onion and bell pepper for 8 minutes or until tender.
3. Add in the corn, tomato, and sausage; stir frequently and cook for 15 minutes.
4. Add in the green onions, salt and pepper; cook 5 minutes.
5. Serve hot.
